The My World On A Plate team just got back from another tremendously successful Sundance Film Festival trip. Heading to Park City, Utah has been one of the highlights of our year the past three years, each trip with its own set of unique experiences.

This year, we once again took over the kitchen in the Chase Sapphire Lounge, cooking up a storm next to other top, celebrity chefs, including Aaron Sanchez.

There were some fan favorites on the menu, including our black & bleu burgers (filet mignon with gorgonzola fondue on brioche) and spicy tuna tostadas (with house pickled onions and avocado yuzu). But Cheven and Chef Manny also collaborated on some new menu additions, including a ridiculously fresh yellow tail hamachi with miso mustard and crispy shallots.

Of course Cheven, always looking to draw inspiration from his current environment and surroundings, added his own special touches along the way— Simmering a wild berry compote with fresh, Park City pine, garnishing french macaroon lollipops with foraged pine cones. All in all, it made for an intimate, whimsical winter experience.

Besides being beautiful, the fresh snowfall also lent itself well to operations, acting as an impromptu cooling system when the fridge ran out of space.

Overall, it was another special experience we are grateful to have been a part of.  Here’s to a fabulous year three— The third time really is a charm!
